Flourless Winter Pancakes Recipe


SNOWPOCALYPSE 2016 has arrived!

I'm not one for the snow, but I always try to make the best of a day inside. My snowday agenda usually starts with a sweaty workout in my room; I'm a big fan of Pilates video on YouTube for days that I'm trapped inside the house. Tone It Up workouts are also a great indoor option as well. The rest of the day consists of writing a few articles, touching up things on the blog, finishing any assignments for the upcoming week, and experimenting with new recipes!

The winter season always inspires me to cook heartwarming food. Some of my favorite spices to use in the winter include cinnamon (obvi!), all spice, cloves, pumpkin pie spice (it's a thing), and ginger.

On this blizzardy day, I was craving a delicious and healthy pancake breakfast with a touch of cinnamon. I threw a few things into the blender, and voilà! This delicious Flourless Winter Pancakes Recipe is really outstanding (if I do say so myself). With under 100 calories per pancake (nutrition facts available at the end of this post), you can enjoy this treat guilt-free!

Stef Health TipsTM Flourless Winter Pancakes Recipe

Makes 6 pancakes

Ingredients:

  • 1/2 cup plain non-fat Greek Yogurt

  • 1 cup old-fashioned rolled oats

  • 1 tsp. baking powder

  • 1 tsp. cinnamon

  • 1 ripe banana, mashed

  • 4 egg whites

  • 1/8 cup almond milk

  • 1 tsp. vanilla extract

  • 1 tsp. raw honey

Garnish:

  • Slices fresh fruit and/or berries

  • Shredded coconut

  • Raw honey

Directions:

1. Preheat your skillet over medium heat and coat with cooking spray.

2. While your skillet is heating, add the ingredients into a blender in the order they are listed. Blend until the batter is completely smooth and the oats are fully ground.

3. Pour or scoop (I use an ice cream scoop to avoid mess) the batter onto the skillet. Cook for about 3 minutes on each side. Coat the skillet with cooking spray again before your next batch.

4. Assemble your pancakes on the tray to your liking. Top the pancakes with fresh fruit slices or berries, a sprinkle of shredded coconut, and a drizzle of raw honey. Serve immediately and enjoy!
