Uhm HELLO, how delicious does this salad look?! You know you need to make this ASAP!
When I traveled to Miami a few months ago, my boyfriend and I went to a restaurant and enjoyed their special of Grilled Watermelon with Feta and Balsamic Vinegar. This flavor combination was on point! I'll never forget how amazing this dish tasted, we may need to take a trip back to Miami just for that delicious watermelon :) This is a picture of us below at the restaurant (we ate the watermelon dish so fast that I couldn't even snap a picture).
My Fresh Watermelon & Goat Cheese Salad with Balsamic Basil Dressing is inspired by that dish we had in Miami. The watermelon adds a refreshing and nutritious crunch. The goat cheese is creamy and pairs well with the summery watermelon. Oven-roasted sliced almonds add a nutty flavor and compliment the rich goat cheese. Lastly, the Balsamic Basil dressing is light and adds the perfect finish to this dish.
Try this dish any time during the summer, and play around with the presentation! You could even serve this on a chunk of watermelon with the tossed salad on top. The recipe does not have serving sizes, but rather gives recommendations for how much to add per person of each ingredient. Get creative and be sure to snap a picture! Stef's Fresh Watermelon & Goat Cheese Salad with Balsamic Basil Dressing
Ingredients
Assorted Mixed Greens
Organic Goat Cheese, Crumbled (~1 oz per person)
Watermelon, Diced (~1/4 cup per person)
Oven Roasted Sliced Almonds (~1 tbsp. per person)
Wish-Bone® Light Balsamic and Basil Vinaigrette Dressing
Directions:
Assemble a large bowl with your desired amount of mixed greens.
Top with goat cheese crumbles, diced watermelon, and oven roasted sliced almonds.
Before tossing the salad, take a picture and tag @stefhealthtips ;)
