Beetroot—also known simply as the beet—has been gaining popularity as a power food. Specifically, this dark red vegetable has been linked to improved blood flow, lower blood pressure, and enhanced stamina. Sweet, earthy, and tender to eat, a beetroot is packed with nutrients including potassium, magnesium, iron, vitamin A, B6 and C, folic acid, antioxidants, and fiber.
Much of beetroot’s proposed health benefits can be due to its high nitrate content. Although nitrate is found in all vegetables, certain varieties such as beetroot and leafy green vegetables are particularly rich in nitrates.
